The Sisters love Shrimp Scampi ! It is National Shrimp Scampi day is on April 29. Let’s celebrate with Suzy’s Shrimp Scampi, Garlic Shrimp with Asparagus and Linguine. A different take on this favorite with a buttery, garlicky, lemony shrimp served with asparagus and linguine.
Shrimp Scampi, Garlic Shrimp with Asparagus and Linguine
Suzy makes a variation of Shrimp Scampi adding asparagus and linguine to this buttery, garlicky, dish of Shrimp Scampi. Celebrate everyday, any day with this easy gourmet tasting dish or on National Shrimp Scampi Day
Ingredients
- Dairy case Linguine or your favorite brand cooked with 3 tsp Better than Boullion chicken flavor
Asparagus
- 1 pound asparagus cut into 2 inch pieces
- 1 T butter
- ! Tolive oil (Suzy likes red pepper chili flake oil) or just add 1/4 tsp or more chili flake
- Salt and pepper
Shrimp
- 2 T Olive oil
- 2 T Butter
- 6 cloves of garlic minced or chopped
- 1/4 tsp red peper flakes or more
- 18 Peeled shrimp 23/25 to pound
- 1 T lemon zest
- Juice from 1 small lemon or 1/2 large lemon
- 2 T parsley
- 1/4 cup Parmesan cheese
Instructions
Put linguine on to cook
For Asparagus saute in butter and oil, and seasonings till crisp and tender about 5 minutes. Remove from pan
For Shrimp saute garlic in the oil and butter with red pepper flakes for about one minute.
Add the shrimp cook till pink and opaque
Stir in lemon zest, juice, parsley
Turn off heat
Add the aspargaus, noodle, Parmesan cheese toss and serve
Notes
Wrap asparagus in tin foil or cover in another pan to keep warm
