Cajun Sausage Gravy

This recipe for sausage gravy is to pour over the Chicken Fried Chicken but can be used for breakfast biscuits too, sausage and biscuits. Suzy uses chicken italian sausage but you can use andouille sausage too, if it is available in your area.

Cajun Sausage Gravy

This is a Cajun seasoned gravy which can be used on biscusits or Chicken Fried Chicken

Ingredients

  • 1/2 pound ground Italian sausage (Suzy used Chicken Italian Sausage)
  • 1/2 diced onions
  • 1/4 cup salted butter
  • 1 tsp Sisters' Cajun Spice Mix
  • 1/4 cup flour
  • 2 cups chicken stock (Suzy uses Better than bouillon
  • 1/4 cup heavy cream

Instructions

  1. Heat a deep skillet add a little oil if you are using chicken or turkey sausage.
  2. Crumble and brown sausage. Remove the sausage from skillet.
  3. In same skilllet, add the butter and onions. Cook ;till translucent.
  4. Stir in one teaspoon of the Sisters of the Spoon Cajun Spice Mix
  5. Add the flour and stir cooking a couple minutes but do not let it brown
  6. Add the stock and bring to a simmer for 5 minutes.
  7. Add the cooked sausage and the cream.
  8. Heat through. Serve over biscuits for breakfast or Chicken Fried Chicken or a Schnitzel
