Suzy’s Land and Sea Tacos

Wow! Suzy hasn’t had a grilled mahi mahi fish taco since being in Florida. The local Walmart had wild caught mahi mahi in their frozen seafood department. Suzy grilled up one filet and used the same seasoning on two chicken breasts for grilled chicken tacos. They make a perfect light summer lunch.

Suzy used one mahi-mahi fish fillet (thawed) and two chicken breasts sliced into strips for skewering

[lt_recipe name=”Land and Sea Tacos” print=”yes” ingredients=”Pico de gallo:;2 Roma tomatoes diced;1/4 yellow onion;2 scallions;1/8 cup chopped fresh cilantro;1/2 tsp fresh lemon juice;1/2 tsp oregano;1/8 cup jalapeño slices;Sprinkle of salt and pepper;;” ]Using a chopper or food processor finely chop and mix together onion, scallions, cilantro, oregano, lemon juice, jalapeño. Put in a bowl with the diced tomatoes, mix, sprinkle with salt and pepper.[/lt_recipe]

Yum! Mahi Mahi Taco

Mahi-mahi is a mild fish and actually does not taste much different than chicken, it has a more delicate texture. This recipe could be used with any other fish (walleye…yum) or skewered pork or beef too. Suzy would recommend removing the skin from any fish you use after grilling.
