Searching google I did not find the answer of why my Dutch Baby didn’t rise? Surely the other Sister of the Spoon, Sharon will have an answer. I texted her, she didn’t answer. Ai states a Dutch baby not rising might be caused by a few things: temperature, batter consistency and oven conditions.
Hmm? Was it because I whipped up my room temperature eggs and cream first then added the flour & salt? Trying again, this time doing like I have done in the past whipping flour, salt, eggs and cream at same time. 18 minutes later it is flat, so flat.

The second fail I look at my ingredients. What did I miss? Ahhh, I think I did this wrong…..my recipe calls for half and half, but I had used full cream, whipping cream. Whipping up another batch of batter, I did not have any half and half but I had some whipping cream left and I had 2% milk, mixing half cream and half milk; homemade half and half? Third time I am going for it. 18 minutes later, Tada! My puffy Dutch baby is baked and beautiful.
