The Sisters of the Spoon winter in Panama City Beach. We love going to a restaurant called the Dat Cajun Place. Sharon’s favorite is the creamy Cajun Chicken Alfredo penne pasta , Tuesday’s special.

Suzy’s favorite is the chicken fried chicken. It is so delicious! Cajun andouille sausage gravy over fried slabs of chicken and a bed of rice. The chef calls them chicken strips. Suzy calls them slabs because they are huge! He shared his recipe in this news article in the Panama City Herald.

Suzy and her hubby had a cravin for this delicious dish so Suzy used her tastebuds to come up with something close to this favorite.

Dat Cajun Place Cafe Chicken Fried Chicken

So why a Golden Schnitzel? With the German Heritage in the Midwest and a National Weiner Schnitzel Day, Suzy investigated to see what a schnitzel is. No it is not a food made out of wieners but a veal dish originating in Switzerland. A schnitzel is a thin piece of meat, usually pounded with a meat tenderizer mallet and then breaded and fried.

So whatever you want to call it a Golden Schnitzel or a chicken fried chicken, this is the copycat recipe Suzy has come up, so when the cravin hits she can cook up a close second.

Ingredients

  • 2 chicken breasts

  • 1/2 cup Panko bread crumbs

  • 1 tsp garlic powder

  • salt and pepper

  • 1 to 2 tablespoons of sour cream

  • olive oil for frying

Directions

  • Put breasts in a plastic storage bag
  • Pound thin with a mallet
  • Mix the Panko crumbs with garlic powder, salt & pepper in a flat dish
  • Remove chicken breasts from bag
  • Pat breasts with paper towels
  • Salt and pepper the breasts
  • Slather the sour cream onto the breasts
  • Pat the Panko crumbs onto the breasts both sides
  • Heat oil in the pan and place breast into fry, brown and cook on each side.
  • Remove from pan and put aside.
  • Make your sausage gravy in the same pan.

Chicken Fried Chicken is a favorite even at our local senior center. At the Bismarck 150th Birthday Celebration our local folk singer sings about it!
