Blueberry Filling for Blueberry Popovers
Ingredients
- !/4 cup sugar
- 2 tblsp lemon juice
- 1 cup Mascarpone at room temperature
- 1 cup frozen blueberries thawed
Instructions
- Puree the blueberries, sugar and lemon juice
- Stir in mascarpone
- To serve spoon into popover or fill cream puff
You can add these fillings to cream puffs or popovers, 3 different ways to sweeten up a popover, blueberry, raspberries or strawberries. Butter or whipped cream is always a great choice for popovers too. Fruit dropped into the batter can effect the puffiness of the popover so add just a few.

Ingredients
- 1 1/2 cups sour cream
- 4 Tblps powdered sugar
- 1 Tblsp dark rum
- 2 tsp cinnamon
- 1 Tblsp brown sugar
- 3/4 tblsp grated orange rind
- fresh sliced strawberries
Instructions
- Combine all ingrediients except strawberries
- Spoon over split popover and top with sliced strawberries
Fill the Raspberry Popovers with whipped cream and the plain popovers with just butter.
