Beef Stew in a Pumpkin

1 pumpkin 9 to 12 pounds
2 carrots sliced or chopped
2 stalks of celery chopped
1 small onion chopped
2 sweet mini peppers
4 to 5 cloves of garlic
1 small onion studded with 4 to 6 whole cloves (do not chopped)
10 to 14 small red potatoes sliced
8 ounces sliced mushrooms
1 pound or more or less of beef stew meat
Seasoned flour to toss the meat in
Oil for sautéing veggies and meat (Suzy likes red pepper flake olive oil)
1 cup red or burgundy wine (Suzy used Madeira)
2 cups broth Suzy used Better than Boullion Beef Base
2 cups water
1/2 tsp salt
1 tsp pepper
1 tsp thyme
2 bay leaves
Directions
- About 2.5 hours before serving
Cut a top hole in your pumpkin, gut the pumpkin,removing seeds and stringy fibers. Save the seeds if you want to make pumpkin seeds. - Preheat oven to 450°
- Place your topped pumpkin in a pie deep dish
- Set in a roaster, place roaster with the pumpkin in it on oven rack
- Boil water in a Dutch oven or big pasta pot
- Pour boiling water around pumpkin pie dish in roaster
- Cover loosely with tin foil. (Pumpkin will get very brown if not fully covered with tin foil).
- Bake 1 to 1 1/2 hours (if pumpkin is done before stew, turn off oven and leave in till stew is done)
- While Pumpkin is baking
- Chop your stew ingredients.
- Shake stew meat in flour in a zip loc bag.
- Over medium heat sauté carrots, chopped onion, celery, peppers and garlic till golden.
- Remove veggies from pot, add oil and meat cook till slightly brown
- Add wine, broth
- Add sautéed veggies, potatoes, mushrooms, clove studded onions
- Add seasoning and water
- Cover and simmer for 40 to 60 minutes till potatoes and meat are tender.
- Remove pumpkin from oven
- Place on platter or a pie dish
- Scoop any water inside pumpkin out
- To serve
- Ladle stew into pumpkin
- Place on table and serve by dishing up a scoop of pumpkin with each serving of stew.
