Lobster BLT What the heck, make it a club

Suzy loves lobster so for a single BLT sandwich she would prefer to use two small tails.

Two slices for this lobster BLT or triple the slices of toast for a club sandwich and double the layers. Use one small tail or more for each serving.  Lobster lovers will want two tails per sandwich.

The better than Mayo is so yummy!

For the cooked lobster tails Suzy used a steamer and cooks from thawed or frozen state. She usually picks them up on sale in the local grocery store.

Ingredients

  • 1 to 2 cooked cold water small lobster tail chopped into 1 to 2 piece each tail and drizzled with melted butter

  • Better than May Avocado spread

  • 2 slices or 3 if making a club Sara Lee Delightfully 45 calorie bread

  • 1 or 2 lettuce leaf (bib, romaine or iceberg)

  • 1 or 2 slices of tomato salted or plain

  • 2 slices of precooked bacon

Directions

  • Take the Better than Mayo Avocado spread and spread on your toasted bread
  • Layer with bacon, lettuce, tomato and lobster
  • Top it off with toast or make another layer for a club
